Roasted Veggie and Smoked Cheese Pizza
My second night in Chicago I was again too beat and too cold to head out for better eats, so I rang up room service and had them make me a veggie-friendly pizza; lots of roasted veggies and a very tasty smoked mozzarella, topped with an entire mini-bottle of Tobasco. It's really pretty hard to go wrong with pizza, but this was almost as good as I would have made at home!

2 Pizzas for 4 People
Julia's friend Berl came over with his pal Lauren, so we grabbed some corn meal pizza dough on the way home and made two pies. The first had broccoli, goat cheese and smoked tofu, and then the second pizza with feta, veggie chick'n, artichoke hearts and roasted corn. We tossed together a quick salad with herb greens, carrot, croutons and a raspberry vinaigrette.

Making Tomato-Chipotle Sauce
Tossed together a quick tomato sauce to top our pizza. Start with a couple cloves of crushed garlic in hot olive oil; add in some minced chipotle peppers; then a bunch of diced tomato. Season and cook down over medium-high heat until you've got it as thick as you'd like. Done in 5 minutes, and it beats the jarred stuff easily.

Homemade Goat Cheese, Apple, and Veggie Pizza
Ahh, the pizza pie - infinite variability, always good. We ran some errands and then headed home for a bite. Trader Joe's cornmeal pizza crust was topped with a homemade tomato chipotle sauce, parmesan and goat cheese, roasted purple potato rounds, green apple slices, baby broccoli, artichoke hearts, garlic slivers, and, yes, veggie meatballs! Oh, the decadence!
Oh, and Archie finally agreed to join the help for a meal, instead of eating his dinner in his golden perch.

Picked up a pie and salad from ZPizza in West Hollywood. This is Julia's favorite - no, globally exclusive - pizza joint, so it's an easy score. We got the Provence - artichoke hearts, capers, tomato, basil, garlic and mozzarella - and a pear and gorgonzola salad. Top it off with a few glasses of Manischewitz, and a new episode of Lost, for a rockin' Friday evening!
